I got the recipe for garlic & onion mashed cauliflower from one of the websites that a friend recommended to me. I'm not overly fond of cauliflower to begin with but the thought of it mashed up with a bunch of garlic and other yummy things sounded really good to me. So when Stephanie asked me to have recipes ready for our meal planning session, I thought this might be a good side to have along with some grilled chicken.
I learned a valuable lesson tonight. ALWAYS.READ.THE.RECIPE.BEFORE.YOU.START.COOKING. I had the cauliflower. I had the onion. What more would I need? Oh hey, how about some fresh garlic cloves? Nope. So I substituted garlic powder instead. Coconut creamer? Nada. I used plain old milk. A food processor? Nil. Hello there, Mr. Blender! It could be that this would have been a wonderful side dish if I had done it right. It just ended up being weird. I think it was the texture. It looked just like mashed potatoes but it didn't have the smooth, milky consistency that mashed potatoes have when they are in your mouth. I ate 3 bites before the gag reflex kicked in. Aaron didn't like them either. Xander did or at least he said he did. Zach didn't even try them.

ReplyDeleteI hope when I make it tomorrow night it's not as big of a FAIL as it was for you. I wasn't going to tell my husband it was cauliflower, but he ended up at the grocery store with me. He's agreed to take a bite, but he's not guaranteeing me anything.

Fascinated and horrified all at the same time. And I'm not a big cauliflower fan to begin with...
